The Griffin Takeaway

As someone with celiac disease, I've always struggled with those crazy busy days that I don't have any time to cook or eat out, because there aren't a lot of gluten-free fast food options, but if I'm over on the East side, then  The Griffin Takeaway is my hands-down my go-to. It's easily one of my favourite places in the city, with a selection of sandwiches, soups and salads that will be ready in a jiffy, and a large case of delicious baking - all of which is gluten-free!

I've been there a ton, and it's become one of my staples. I can always expect a most delicious dessert that doesn't make me one bit paranoid. I'm always torn between cheesecakes, brownies, pastries, cookies, and tarts. They have so many options, and it always looks splendid.

They also have a selection of soups and sandwiches, but I haven't tried very many. I usually order the pulled pork, which is delicious and I love it.

To be honest, pretty much everything else is a little "weird". You'll find hummus, goat cheese and artichokes, but not much for "classics". However, if you're looking for dairy-free, vegan, or vegetarian options, you will find them here!

 If you have any dietary restrictions at all, I would recommend checking out the food at Griffin, and if you're looking for a great bakery on the East side, definitely check them out! It's one of those places that proves gluten-free can be delicious too.

Tutti Frutti

Let's talk about frozen yogurt for a moment.

I have always been an ice cream kind of gal. I love a big bowl of creamy frozen milk, and it was a staple growing up. It's kind of hard now, because dairy makes me so sick and I just don't think that bowl of frozen deliciousness is worth it. I occasionally buy dairy-free ice creams, but they always let me down.

The other problem I have with ice cream is when it comes to a last-minute date. Our old house was a block away from a cute little ice cream shop, so in the summer, hubby and I would walk the dog down and take a little "date" out of our day to enjoy some ice cream.

Well, that's great. And I love it, but again, I don't love feeling sick afterwards.

Now, our new house is a few blocks away from Tutti Frutti (and by few, I mean a few too many to walk). Several times since we've moved, my husband and I have driven over and enjoyed some time together there.

If you've never been to Tutti Frutti before, they usually have ten or so different flavours of frozen yogurt, and you grab a bowl and fill with as much of whatever flavour you like. Then they have a topping bar, and you can put anything from sprinkles to cookies to candies to fruit on top of your fro-yo. And then you pay by the weight.

Every time I've been, they have two dairy-free flavours, usually one soy-based ice cream, and one fruit sorbet. I usually get a little of each, and while I can't enjoy any of the toppings, my husband does. (It's buffet style. Having one dish of cookies means I can't touch anything on there. And then the sprinkles and carmel sauce are iffy, so I just enjoy my plain dairy-free dessert.)

I love it. I get to enjoy my pseudo-ice cream, my husband gets to enjoy his completely-overloaded-frozen-yogurt and we get to spend a little time together.

Panago Pizza

Ordering in pizza is hard, as a celiac. Most pizza places carry a gluten-free crust, but their contamination policies vary, and it's hard to say whether it'll be safe or not. However, because ordering in pizza is the most convenient, simple, and tasty dinner ever, I keep doing it, despite the risks. When we lived in Moose Jaw, we tried a couple of different places, and I always tried each place more than once. But if it made me sick more than once, I gave up and moved on to another place. There was only one place I could consistently eat without getting sick, and my husband didn't like their pizza. So ordering in pizza was actually quite the ordeal.

On the day that we moved to Saskatoon, we had several people helping us unload, and we were all hungry, so I went online and ordered in some pizza.

I picked Panago, on a whim, and I don't know if I'll ever try anywhere else ever again.

Their online ordering system is smooth, straight-forward and very customizable.

They do have a gluten-free crust, which I think is bigger than most places, but it's been awhile since I ordered in pizza, so don't quote me on that. The best part though, is that you can select Daiya dairy-free cheese to top your pizza with!

So I ordered in a gluten-free, dairy-free pizza with all the toppings I wanted (they have a list of gluten-free toppings, so you're sure) and I didn't get sick at all! There wasn't any dairy to upset my stomach, and I didn't get glutened! We've ordered it in three times now, and I've had the same success.

My husband wants to keep trying other places that we didn't have in Moose Jaw, but they don't have dairy-free cheese, so I'm reluctant. Haha.

I realize most of my friends who don't have dietary restrictions prefer other places, but if you are worried about either gluten or dairy, I would highly recommend Panago.

My life, lately

I haven't been doing much that's blog-worthy, but I have been doing lots of things lately, so here's a quick summary of my current obsessions, hair colour and foods I've been buying.


My sister and I dyed our hair from the same box of dye, so now we have the exact same colour of hair. No one will notice, though, because we're sisters, and they expect us to look alike. (PS, we both dyed our hair as close to natural as possible, because we both have grays coming in. What is up with that?)


On my slow journey towards cutting all dairy out, I bought some dairy-free coffee creamer. I've tried a few kinds, and this is my favourite! I honestly can't tell it's not dairy, and I feel just a little bit better throughout my day.

Freezer Meals: Teriyaki Chicken

The second meal to come out of my freezer and into my slow cooker was teriyaki chicken.
Ingredients
Medium - large bag of carrots
Red onion cut into large chunks
2 large cans pineapple (undrained)
4 garlic cloves
4 chicken breasts (or eight chicken thighs)
1 cup teriyaki sauce
Split between 2 bags, seal, mix, lay flat, freeze
Directions for bags:
Add 1/4 cup teriyaki sauce to pot. Cook low 6-7 hours. Serve over hot rice.
 It was super easy to throw everything in the bag, like easier than the other ones. The only part that took any time was the carrots. I wasn't sure from the recipe what to do with them, so I julienne'd them through my mandoline. The original recipe called for chicken breasts, but my grocery store was absurdly out of chicken breasts, so I substituted chicken thighs, and left them whole.

Freezer Meals - Italian Sausage and Peppers

The first meal from my freezer cooking that I made was Sausage & Peppers.
Ingredients:
6 Italian Sausages
2 Green Peppers
1 Red Pepper
1 Red Onion
4 Cloves Garlic, Minced
2 Cand Italian Diced Tomatoes
2 Tbs Italian Seasoning
Split between two bags, seal, mix, lay flat, freeze
Directions for bags:
Add drizzle of olive oil, cook on low 6 hours, serve over hot noodles or fresh french bread with mozzarella cheese.
Just looks like veggies to me!

Freezer Cooking

 I love freezer cooking. It's a pretty basic concept, but the application is a little intensive.

Basically, you take some time, and prep a whole bunch of meals and put them in your freezer so when you want dinner, it's prepped and ready and just needs to be finished. Finishing varies on what recipes you do. I've done casseroles that just need to be popped in the oven for an hour or two, I've done barbecue meat that just needs to be thawed and grilled, but my favourite is slow cooker meals. You toss everything in a bag and then thaw it, dump in in your slow cooker and have dinner! Or, put it in a strategically sized container before freezing and then dump the frozen dinner in your slow cooker.

I haven't done this gluten-free, but I did do it a few times a few years ago. I always had a hard time getting all the groceries - it would take me a few days to find everything, and then I had to set aside an entire Saturday to do it all. I'm not sure how exactly I did things differently this time, but it worked a lot smoother.

I figured out what meals I wanted to make, made a combined list of groceries, went straight to the grocery store after work, got home around six, and by ten o'clock everything was in the freezer.

Daiya Pizza

A few weeks ago, my sister and I were discussing what to eat for dinner, and I said, "Is it too much to ask for a gluten-free, dairy-free pizza?" She looked at me and said, "Uh, yeah. It is."

I realize that this small town will probably never have a restaurant that offers a DF GF pizza, but you can buy frozen ones! I had to hunt and hunt for one, but after trips to three different stores, I found one! Exactly one.


Daiya Foods mushroom & roasted garlic pizza, to be specific. I really wanted one with meat on it. I'm honestly not a fan of vegetarian pizzas, but when the decision was between a pizza with meat on it and a pizza that won't make me feel sick later, I chose the vegan option. I'm okay with this.


When it comes to ease and time of prep, it's a pretty classic frozen pizza. Didn't take much work, or much time. When it was done, the cheese didn't look melted. The photo above is after it came out of the oven. I thought the cheese was still frozen, but when I poked it, it was melty and hot.


The pizza was relatively good. The toppings were great, and the crust was good. But honestly, I'm not a huge fan of Daiya cheese. I have heard endless raving compliments about it, but I don't like the way it clings to the roof of my mouth. Mind you, I've always had issues with that. I stopped eating peanut butter for years because it freaked me out when it clung to the roof of my mouth. So maybe this is just me. Anyways, the pizza was good. And I didn't feel sick all night after eating it. Two wins.

I will probably buy this again, although I'll probably hunt for a different flavour. I liked it well enough, but I like to try other things too.

I guess I'd give this pizza three stars. It was good, it wasn't amazing, but it didn't make me sick.

Daiya Cream Cheese Style Spread

Every time I pick up a new pack of my dairy-free cheese, I notice all the other dairy-free products. It's crazy, isn't it? Butter, sour cream, cream cheese, you name it, you can get it dairy-free. I usually eye up all the options, and then buy only what I actually needed.

Cream cheese is my biggest weakness. I used to be a bagel-addict. I probably ate a dozen bagels every month, sometimes more. If I was out of cream cheese, I'd eat peanut butter or Nutella on them, but cream cheese was my very favourite thing.

I honestly have not bought a single pack of cream cheese since my diagnosis.

Not one.

How depressing is that? I consider it, every now and then, but what would I eat it on? Whenever I buy bread products, I usually have a plan for them. I'll buy a pack of gluten-free sliced ham and a loaf of bread and eat sandwiches for lunch a few days. Or I'll buy a package of gluten-free crackers and a little package of goat cheese. Bread products are such a luxury for me, that I haven't wanted to "waste" one on cream cheese.

But I caved. I bought a package of gluten-free sandwich bread and a little container of Daiya cream cheese style spread in strawberry flavour.

Chocolate Breakfast Muffins

I did work on spring cleaning this weekend, but I got stalled and distracted a lot. My sister came into town (she lives on a farm 1.5 hours from here) and I spent a ton of time with her. I also decided to make chocolate muffins.

A friend of mine posted a photo of her adorable 9-month-old baby covered in gluten-free chocolate muffins crumbs, and I asked for the recipe. I've been in kind of a baking funk for a really long time, but having a clean kitchen now makes me want to bake again. After reading through the recipe and realizing I had everything I needed, I made it. Simple as that.

Quick Meals: One Pan Lunch

I love breakfast foods, but I very rarely eat breakfast, so what I really love is breakfast for dinner. Or lunch. You know, I think I'm in love with lunch. At lunch, you can eat breakfast or dinner or whatever you please and nobody judges you. Roast beef for lunch? Cool. Waffles with whip cream? Okay. Peanut butter sandwich? Awesome. See? Nobody cares. Lunch is the best meal of the day.

However, most people don't have a lot of time for lunch. I know I'm lucky by being able to go home every day for lunch, but I still have a limited time to prepare and consume lunch.

When you combine the love of breakfast with the lack of time, you end up with bacon. Bacon and eggs. Neither take very long to cook, and they're whole, real and a part of most clean-eating diets. I add in a potato patty because I'm still a little old-school and I like to see carbs as a part of my meals. Amazingly, I discovered that one egg, one potato patty and two slices of bacon all fits in one pan.

I add the bacon to a dry, heated pan, and let some of the fat come out, and then add the egg and patty so that they cook in bacon grease. Oh, so healthy, hmm? I like to cook my egg sunny side up or over easy and then soak up the yolk with my potato patty.

I like this meal because it's about limits. I can only cook two slices of bacon and one egg, even though my brain says I want two eggs and three slices of bacon. Also, without any added oil, salt or sugar (besides whatever the potato patty was processed with...), it is very nearly a clean eating meal! (Most clean-eating or paleo diets restrict potatoes, which is why I haven't managed a paleo diet yet.)

Peanut Butter Cookies

Growing up, peanut butter cookies were one of my favourites. They were one of the first things I made by myself, without my mom's help. I loved how easy they were to make, I loved pressing a fork down into the soft dough, I loved the peanut smell that filled the kitchen and I especially loved eating them.

Oddly, peanut butter cookies aren't something I've attempted gluten-free. Until now. And I think "attempted" covers it. 

I followed this recipe which is flourless, dairy-free and easily egg-free.

I started out with such good intentions! Even when I saw things were starting to go wrong, I pressed on and made the little fork indents, but... Well. You'll see.

BBQ Chicken and Potatoes in a Slow Cooker

When I don't have much time to prep dinner, I steer towards my slow cookers, because I can put something together at lunch and then eat it a few hours later. When I don't plan for something specific (and find ingredients and a recipe), then I fall back on one simple guideline: Potatoes, chicken, flavour. It's simple, low-prep and fool-proof. I usually have chicken and potatoes on hand, whatever flavour I use can vary from spices to sauces, whatever I'm feeling or whatever's handy.

I buy baby potatoes, and we like eating them with the skins on. You could peel and cube larger ones, but slices of potatoes also works well. You want to cover the whole bottom of the pot.

Slow Cooker Sweet Potatoes

I love sweet potatoes. I love the flavour, the texture, the colour. I love how they can be dressed up in brown sugar and cinnamon and taste like a desert or be covered in savoury spices and make a great side to a breast of chicken.

[Fun fact: A yam is a plant that grows large starchy tubers, and while sweet potatoes are large, starchy tubers, they are not actually yams, although places in the US call them that. Google it.]

Tuna Casserole

I was never a fan of canned meat as a kid. I flat out refused to try tuna for a very long time, and I'm not sure if it was my aversion to fish or my aversion to canned meats. When I was just dating my now-husband, he introduced me to tuna salad sandwiches. I actually enjoyed the one he made for me, so I started making them. Like, all the time. I lived off of tuna salad sandwiches in highschool.

After I got married, my husband made a tuna casserole. I loved casseroles, and I loved my tuna salad, but tuna and pasta? I wasn't sure. Once again, I enjoyed it, and after that, I started making tuna casseroles. We both liked them quite a bit, so they become a staple in our early days of meal planning.

When we started eating gluten-free, I wanted tuna casserole, but I couldn't use a can of cream of chicken soup anymore. Instead of googling how to make a gluten-free version, I just made it up. It took a few tries, but I figured it out. M and I love it, and it's super easy, and uses things we have on hand (which most of the stuff I make up does). It's not dairy-free yet, but I'm getting there.

Quick Meals - Tuna Spaghetti

As I mentioned in my previous post, I don't always have a lot of time to eat, and I eat some creative meals sometimes. This is definitely one of them. Sometimes, I look at whatever ingredients I have on hand and type them into a Pinterest search. I've gotten a lot of really great recipes this way.  I'll type things like "Bacon hashbrown" or "egg spinach" and it comes up with pins where people typed something like "Breakfast casserole with bacon and hashbrowns". This time, I opened my cupboard and grabbed a box of gluten-free spaghetti and started boiling it. While it was cooking, I found a can of tuna and searched "tuna spaghetti." The recipe I found was a lot more complicated and involved sauteing garlic, but I skimmed it, got the basics, and went from there.

I dumped one cup of garlic and herb pasta sauce into a microwaveable bowl, stirred in a can of tuna and heated it up. When the pasta was done, I dumped the sauce on top and chowed down. Super quick, easy, nutritious and delicious. It could have had chopped fresh veggies or cheese to make it better, but my focus was time and ease. Feel free to make it your own. 

This made two servings, which meant it could have been a meal for my husband and I, but instead it was lunch one day and dinner another for me.

Say Cheese!

I realized that I had five different kinds of cheese in my fridge, three of which were dairy-free.

Now before you go thinking I'm some kind of cheese freak, let me explain.

  1. The first cheese was a brick of soy cheese, the first one I bought when I decided to try eating dairy-free.
  2. Next, was a pack of dairy-free Swiss flavoured cheese slices.
  3. There was also a pack of dairy-free cheese shreds.
  4. My husband bought a bag of Mexicana style cheese last time he was home.
  5. And I had a container of feta.
I was in the mood for cheese toast, but I wasn't sure what kind of cheese, so I went with all of them! Excluding the feta, that is. I love feta, but maybe not on a toasted bun... Haha.

Daiya Swiss Style Slices

The next stop on my dairy-free expedition was grilled cheese sandwiches. I can pretend I planned it that way, but I'll be honest. M and I were talking about what to eat one Saturday and I announced I wanted grilled cheese sandwiches with tomato soup. However, I can't eat bread, cheese or tomato soup! Well, at least not any of the "normal" kinds. Since we needed some other groceries, M and I went to the grocery store and picked up a loaf of Udi's gluten-free white bread and a pack of Daiya Swiss Style Slices.

Soy Pudding

When I found this soy pudding for just a little bit more money than normal pudding, I was sold. First of all, it says Gluten Free. The normal pudding doesn't, but it doesn't directly contain gluten, so it's a bit of a risk. Second, this stuff is lactose free. Not dairy-free, per se, but lactose is close enough for me. It's not like I have a casein allergy.


I was, admittedly, a little bit skeptical, but I love pudding, so I just dove right in.

Pizza!

As I'm sure you've noticed by now, I'm not one to go all out on most of my meals. Every now and then I get in a mood and whip up something fancy, but on the norm, my cooking is just like my mom's; plain, simple, easy, and delicious.

So when I found some GF pizza shells on the 50% off rack (read: about to expire), I picked up a squeeze bottle of pizza sauce and some ham. Time to test this cheese stuff on a pizza.
